Crack the eggs, separating the whites from the yolks. Keep one yolk and set the rest aside—you won’t need them.
Using a mixer, beat the egg whites until stiff peaks form, about 2–3 minutes.
Then add the flour, egg yolk and baking powder. Mix everything again.
Next, add the diced apples to the batter and gently fold with a spoon.
Line a heatproof baking dish in the batter.
Bake in the oven for 25–30 minutes.
Let the cake cool slightly before serving.
Optionally, you can drizzle a bit of honey or maple syrup on top for extra sweetness.
